    新型コロナウイルス感染症(COVID-19)感染拡大防止のため、2020年3月から5月下旬まで、全国の小・中学校の臨時休校に伴い学校給食も停止となった。その際の栄養教諭・学校栄養職員の対応について調査し、不測の事態への備えについて検討した。2020年12月~2021年1月に、学校食育研究会に所属する会員・準会員14人を対象に、自記式アンケート調査を実施した。調査の結果、臨時休校後に最初に行ったことは食材管理で、生鮮食品、日配品の取り扱いは廃棄あるいはキャンセルであった。給食停止で最も困ったことは食材管理であり、業者への支払い、給食費の返還等の業務も発生していた。休校中には、分散登校時の食数把握、会議資料作成、清掃業務、情報発信等を行っていた。学校再開後には、簡易給食等のCOVID-19に対応した給食提供を行った。今後は、不測の事態に備え、自治体との連絡を密にし、食品納入業者・給食委託業者間との取り決めおよび応用と展開が可能な献立作成、ICT教材の蓄積が課題として挙がった。
