The possibilities of obtaining specialty oils, by pressing, i.e. cold pressing of different raw materials are overviewed. The literature data on fatty acid composition, content of tocopherols, ...phytosterols and phenolic compounds of certain specialty oils, like pumpkin seed oils, tree nut oils and berry seed oils are presented. The factors affecting the quality of the mentioned oils, presence of possible allergens and toxic substances, as well as the possibility of use of oils are also mentioned. A special attention has been paid to the contribution of specialty oils in health promoting.
